Crispy Chicken Strips with cashew clusters crust

Prep Time: 30 min // Cook Time: 20 min // Total: 50 min // Serving: 18 strips


Ingredients:

  • 2 pounds boneless chicken thighs - cut into one inch strips, about 18 strips

  • 1 ½ cups cashew clusters

  • 1 cup Italian breadcrumb

  • ¼ cup Parmesan cheese, shredded

  • 2 eggs

  • 1 ½ cup flour

  • ¼ teaspoon Mrs. Dash, original seasoning blend

  • ½ teaspoon salt

  • 2 tablespoon water

Instructions: 

1. Pre-heat oven to 400 degrees

2.   Cashew cluster breadcrumb:

Use a food processor to finely chop the cashew clusters. Combine chopped cashew clusters, Italian breadcrumb, Parmesan cheese, seasoning powder and salt together in a shallow dish

3.  Egg batter:

Mix water and eggs together in a shallow dish

4. Arrange the flour, cashew cluster breadcrumb, and egg batter in an assembly line

5. Coat the chicken strip first with flour, then dip into the egg batter. Let any excess egg drip off. Lastly coat the chicken strips with the cashew cluster breadcrumb

6.  Arrange coated chicken strips onto a baking sheet

7. Coat chicken with cooking oil spray (such as Pam) on the both sides

8. Bake the chicken strips with convection bake option for 20 minutes. Flip the chicken strips halfway through
