Peach sorbet

When I see peaches, I know summer is coming. When I think about summer, I think about refreshing frozen fruity treats like sorbet. The main ingredient of this sorbet are peaches but can be substituted with other types of fresh fruit. If you enjoy eating sorbet but don’t want added sugar, you must try my white peach sorbet. This sorbet is not only delicious, sweet, and refreshing, it has no added sugar. This recipe only needs two ingredients: very ripe frozen white peach chunks and very cold ice water, that’s it! In case you are wondering, yes, yellow peaches will work too. Just keep in mind that it will taste more tart than with white peaches.
It is very important to use ripe white peaches. Because the ripeness gives the sweetness and juiciness to the white peaches, which is the reasons for not needing added sweeteners. It is also important to use very cold ice water. You know your water is cold enough when there is some condensation on the water glass. I can’t explain the logic here; I just find that cold ice water provides a better creaminess in this sorbet recipe than the room temperature water. So, don’t forget to use ice cold water when making this recipe.
This sorbet tastes light and refreshing. The best part is that you are actually just eating frozen fruit. You can enjoy this sweet frozen treat any time of the day!
Ingredients:
2 white peaches, diced
3 tablespoons ice water, divided
Instructions:
Clean, peel and dice peaches
Freeze diced peaches in a container until they become frozen hard
Place about ¼ cup frozen peach chunks in a food processor and add 2 tablespoons of cold ice water on the bottom of the food processor
Place remaining frozen peach chunks in the food processor and place 1 tablespoon cold ice water on top of the frozen peach chunks
Chop the frozen peaches to break up the peach chunks ( ~2 minutes)
Grind the frozen peach chunks until creamy. Stop and redistribute the peach chunks while grinding as needed
Serve immediately
